Sweet Potato and Red Curry Soup

This is a seriously good soup! The combination of the rich blend of creamy sweet potatoes, fresh ginger and the flavour of red curry is a winner. Cooked in the EasyOven and served with crusty bread, this soup is a hearty, flavoursome bowl of goodness.

If you find your soup a little too thick add a little water to get your required consistency.

Recipe

Ingredients:

1 tablespoon Oil

1 Onion (medium, diced)

2 cloves Garlic (diced)

1 tablespoon Red Curry Paste

1 tablespoon Ginger (fresh, finely grated)

1 kg / 2¼ pounds Sweet Potato (fresh, grated)

425g / 15oz Coconut Milk (light)

1 cup Vegetable Stock

Method:

Add oil, onion and garlic to a pot and cook till onions are soft and slightly brown.

Add red curry paste, fresh ginger and mix well.

Add grated sweet potato, coconut milk and vegetable stock. Mix well.

Bring to the boil and boil for 10 minutes.

Remove pot from heat and place entire pot into the EasyOven™ and close.

Leave in EasyOven™ for 1 hour.

Serve with crusty bread and splash of lime or lemon juice and spring onions to garnish.
